Potato Pie: Don’t need a lot of prep time for this one.
Ingredients:
2 lbs. Potatoes
½ lb. shredded mozzarella
2 thick slices of ham
1 thick slice pancetta
6 large eggs
4 tbs. grated Romano
2 tsp. chopped Italian parsley
½ cup bread crumbs
salt and pepper to taste
Clean potatoes and boil in salted water until tender, about 20 to 30 minutes. Let the potatoes cool, peel and mash until smooth. In a large bowl add the potatoes, the mozzarella, ham, pancetta, eggs, cheese, parsley, salt and pepper. Mix well.
Butter an 8×8 baking dish and sprinkle bread crumbs to cover lightly the bottom of the dish. Save some bread crumbs for the top. Place potato mixture in the dish and now sprinkle the remaining bread crumbs over the top. Bake in a preheated 375 degree oven until golden brown, about 40 minutes.
Dry breadcrumbs are made from dry bread which has been baked or toasted to remove most remaining moisture, and may even have a sandy or even powdery texture. Bread crumbs are most easily produced by pulverizing slices of bread in a food processor, using a steel blade to make coarse crumbs, or a grating blade to make fine crumbs. A grater or similar tool will also do.*
