Olive Salad Sandwich – Big Game Party Hit

Don’t know what to bring to your Big Game Party?  Try this Olive Salad Sandwich. 

LZ98_001_0024_11DMEvery year we throw a Super Bowl pot luck party and the food is always over the top.  We usually provide some side dishes, the beverages and the big screen TV.  This year however, I’m putting together a few 2 foot Olive Salad sandwiches, Muffuletta style.

Here’s the recipe: Ingredients:

Olive Salad (should be made a day in advance and refrigerated)

2 cups of pitted green olives (your choice)

1 1/2 cup pitted black (again your choice, but I like kalamata)

2 cup Giardiniera (pickled cauliflower, carrots, celery, pepperoncini)

2 tbsp. whole capers

8 large cloves of garlic sliced

2 stalk celery thinly sliced

2 tbsp. chopped parsley

2 tbsp. oregano minced

2 tsp. crushed red pepper

5 tbsp. red wine vinegar

1/2 cup roaster red peppers diced

2 tbsp. green onions thinly sliced

Olive oil to cover – salt and ground pepper to taste

Preparation:

Crush and dice the olives with the back side of a knife and combine and mix all the ingredients.  Cover with olive oil and place in the refrigerator.  This should really be made in at least one day in advance to allow the ingredients to blend.

The above recipe should make enough to top one 2 foot hero.

Muffuletta: Many people use the olive salad to make Muffuletta, an Italian Hero.  You can adjust the meats any way you wish.

Since I’m staying strict to my Mediterranean Diet, I intend on using Spicy Chicken, Turkey and Provolone on one sandwich and more traditional Muffuletta meats like Genoa Salami, Mortadella, Capicola  and Provolone cheese on the other for my guest.

Cut you bread in half lengthwise and place a layer of the olive salad on the bottom.  Place your meats and cheese in any order you wish and top with another layer of olive salad.  Press the sandwich together to allow the bread to soak in the juices.  Cut in one inch pieces and hold each piece together with tooth picks.
