Spaghetti with Broccoli, Garlic and Oil: Quick and easy.
1 lb. Spaghetti (I also use Cavatelli)
½ cup of olive oil
1 bunch of broccoli, cut and steamed
¼ cup grated Parmesan
3 gloves minced garlic
¼ cup fresh Italian parsley
Begin by boiling water to cook your spaghetti. I often use the same water that I steamed the broccoli in. As the spaghetti is cooking, begin heating the olive oil. When hot, lower the flame and add garlic, parsley and pepper.
After 2 minutes add the steamed broccoli, mix and continue cooking until the spaghetti is ready (al dente). Drain the spaghetti and add to the oil and broccoli. Mix together, and add additional olive oil if needed to cover the spaghetti. Serve with grated Parmesan.
