Potato Croquettes

1 lb. potatoes

2 tbs. grated cheese

1 egg

1 clove of minced garlic

½ tsp. fresh chopped parsley

¼ Italian bread crumbs

½ cup flour – more if needed

½ cup olive oil

salt and pepper to taste

Clean potatoes well and boil with skins till tender.  Drain, cool, peel and mash the potatoes.  Mix the potatoes with the grated cheese, egg, garlic, parsley, bread crumbs, salt and pepper.  Form into oval shaped croquettes about 2 inches long and 1 inch wide.  Roll in flour and sauté in moderately hot olive oil until golden brown on both sides
