Gracie's loved making Chicken Marsala. She was a big fan of mushrooms
- 1 pkg. chicken cutlets
- 1 or 2 eggs
- Italian bread crumbs
- ¼ cup chicken broth
- 1 small can of sliced mushrooms
- ¼ cup Marsala red wine
- 1 tbs. butter
- ¼ cup olive oil
- Make an egg bath and dip chicken cutlets in egg mixture with your left hand and into the bread crumbs with your right hand. Refrigerate for one hour.
- Fry cutlets in hot oil until golden brown. Remove the cutlets from the pan and drain in paper towels.
- Strain oil and return one tablespoon to the pan. Return cutlets to pan and add broth, mushroom, wine and butter. Cover and let simmer for approx. one hour or until tender.
