Chicken and Sage: Look for fresh sage to really do this right.
Chicken and Sage
One of my favorite Chicken dishes.
- 1 roasting chicken
- 1 large garlic clove chopped
- 1 tsp. minced fresh Italian parsley
- ¼ cup butter
- ¼ olive oil
- juice of one lemon
- salt and pepper to taste
- ½ tsp. dried sage leaves
- In a small bowl mix garlic, parsley, and lemon juice and set aside. Wash and cut chicken into serving pieces and dry well. Rub the chicken with butter and oil, sprinkle with salt, pepper and sage. Place chicken in pan large enough to hold the chicken and cook in a pre-heated 350 degree oven for ½ hour. Turn the pieces over and cook for another 30 minutes. When done – the chicken should be tender – pour lemon mixture over the chicken and cook for another 2 minutes. Serve hot.
- Tip: Cut up and few potatoes and let then cook in the pan as well. This will help balance out the meal
