Breaded Fillets of Flounder

I had this dish so many times that I used to see it in my sleep. So simple, I'm sure you all have done this a thousand times but in case you haven't here's the short and simple of it.
Ingredients
  • 1 lb. fillets of flounder
  • 1 beaten egg
  • ½ cup seasoned Italian breadcrumbs
  • ½ tsp. dried parsley
  • ½ lb. grated cheese
  • ½ cup olive oil
  • salt and pepper to taste
Instructions
  1. Wash and dry fillets. Dip fillets in the egg batter with your left hand and roll in the mixture of breadcrumbs, parsley, grated cheese, salt and pepper with your right hand. Add fillets to a skillet of heated olive oil and cook both sides until golden brown.
