How to Make Killer Cream Puffs

- The Shell:
- 1 cup boiling water
- 1 cup butter
- 1 cup flour
- 4 eggs
- The Filling:
- 1 large can evaporated milk (simmer-scald first)
- 1 cup sugar
- ⅓ cup flour
- 2 eggs
- 1 tsp. vanilla
- The Shell:
- When the water is boiling briskly, add the butter and let melt and bring to boil a second time
- Add flour and stir hard
- Cook over low heat until the mixture is heavy and follows the spoon
- Remove from the heat and cool 5 minutes
- Drop in eggs one at a time and beat well before adding the next
- Drop by spoonfuls on a greased baking sheet
- Bake in a 425 degree oven for 25 to 30 minutes.
- Shell should to golden brown
- Cool, slit on half fill with custard filling and reattached the other half
- You can also use a pastry bag to pipe the filling into the shell
- The Filling:
- In a bowl mix the sugar, flour and eggs
- Add vanilla
- Pour mixture into the milk
- Cook until thickened
- Pour back into the bowl and stir until smooth
